Pesto production is in full swing these days and whether you store it in ziploc bags, canning jars or vacuum bags it's easy to freeze. Few pleasures surpass the taste of a pesto pizza in the middle of winter, when the garden is sleeping.
The latest idea for storing Basil though has to do with ice cube trays.
- Harvest the leaves of enough Basil to fill a medium sized food processor.
- Rough chop 4 cloves of Garlic and add to Basil. Pulse a few times to chop the herbs.
- Then spoon into ice cube trays.
- Dot with Olive Oil and freeze.
